kann mir jemand sagen wie ich beim Tomcat ein zweites document root anlegen kann?

hm was willst Du denn damit erreichen ? Mehr als einen Root-Context kannst Du auf einem Host nicht haben.. und zwei gleichnamige Contexts geht auch nicht ?!

sagen wir ich will das bestehende doc root ändern

der einfachste weg ist den Inhalt in tomcat/webapps/ROOT einfach gegen Deine Applikation auszutauschen, falls Du die Dateien woanders ablegen willst musst Du entsprechend in der conf/server.xml einen Verzeichnis auf das physikalische Verzeichnis machen.
